Sausage and Bean Casserole for a Miserable Monday

Today was another extremely boring day at work.... To be honest when it's so quiet in the office that I go a little brain-dead, the last thing I want to do when I get home is cook. Thankfully I'd anticipated this over the weekend and made the following in advance for tonight's dinner, which would easily feed four people:

  • 1 x pack small chorizo sausages (approx 8)
  • 3 x traditional british sausages (leftover from Sunday breakfast)
  • 1 x 400g can of chopped tomatoes
  • 1 x 400g can of cannellini beans
  • 1 x 400g can of beans
  • 3 x small white onions
  • approx 1 teaspoon wild garlic
  • approx 1 teaspoon paprika
  • approx 1/2 teaspoon ground mild chili
  • 1/3 pint of beef stock
Preheat the oven to 150 deg C. Chop both kinds of sausages into smallish chunks and the onions into small wedges. Pour a little olive oil into a frying pan over a low-medium heat and add the sausages and chopped onions. Drain the beans and prepare the beef stock whilst the onion/sausage mixture is beginning to cook; add the beans, tomatoes and beef stock mixture once the onion pieces become translucent. Now add the herbs and spices and once thoroughly mixed through transfer to a casserole dish, cover and place in the oven. Cook for 1 hour and either serve or save for the next day (I think this tastes even better if left for a day!). I ate this with a just-baked baguette - yummy!
